Potato Leek Soup

So simple and when paired with a grilled cheese sandwich, the perfect comfort food!

3 cups leeks, thinly sliced (the white and tender green parts only)
1 lb. potatoes, peeled and diced (I don't always peel them)
1 T salt
4-6 T whip cream or 2-3 T butter
2-3 T minced parsley or chives.

Simmer veggies 40-50 minutes until tender.  Mash with a fork or in a blender (blender is best).  Add butter and herbs at the end.

Optional: add carrots to the simmering vegetables at the beginning.
