Bean Salad

1 Red Pepper, chopped
8 oz. can of corn kernels, drained
15 oz. can Garbonzo beans, drained & rinsed
15 oz. can black beans, drained & rinsed
15 oz can kidney beans, drained & rinsed
olives, chopped (optional)
5-6 peppadew peppers (sweet small red peppers), chopped

dressing;
juice from one lime
1/2 bunch of cilantro, chopped
1 t. cumin
2 T olive oil
1/2 t. salt (you can add 1/4-1/2 t. more to taste)

Mix the dressing with ingredients thoroughly.  this salad will last several days in your fridge!
